Ingredients
2Ciabatta Buns I made homemade ciabatta, you can use store bought or sub for a whole grain bread or local sourdough
6Pasture Raised Eggs
4SlicesLean No Sugar Added Bacon
1cSpinach Can use any mixed greens
SprinkleSheep's Milk Fresh Feta Cheese
Hot Sauce I used crystal brand, optional
Instructions
Heat pan to medium high heat
Place the bacon on cold pan and let the bacon cook as it heats up. This will prevent the bacon from shrinking, keeping it nice and flat for building your sandwich
Cook the bacon on each side for about 3 minutes or until crispy
Remove bacon from pan, set aside on a plate with paper towels to absorb excess grease
Crack eggs into a bowl, whisk together and add in salt and pepper.
Pour eggs in the pan with remaining bacon grease and soft scramble until done
Remove eggs from the pan and begin assembling sandwich
Add bacon, eggs, spinach, sprinkle of feta and hot sauce to the ciabatta bread
Option to add avocado here, best if serving fresh.
Don't have homemade ciabatta? No problem! Use a high-quality store-bought whole wheat wrap or whole wheat bread. Toast it lightly for added texture.
Not a fan of bacon? Experiment with turkey bacon, tempeh, or even crumbled sausage for a protein twist.
Want to add more veggies? Sauteed peppers, onions, or mushrooms would be delicious additions to the filling.
