Imagine this: You arrive at a friend's backyard BBQ, the air thick with the aroma of chargrilled goodness. But burgers and brats hold no temptation for you. Worry not! Because nestled amongst the usual suspects on the buffet table sits a platter of vibrant BBQ Shrimp Tostadas. Crispy tortillas cradle juicy, smoky shrimp, drizzled with a sweet and tangy BBQ sauce. This recipe is surprisingly simple to prepare. Marinate plump shrimp in a smoky, homemade BBQ rub – think paprika, chili powder, garlic. Then, grill or air fry them to succulent perfection. While the shrimp sizzle, assemble your tostadas with a bed of crisp slaw, a dollop of creamy avocado mash, and a vibrant fiber rich slaw. BBQ Shrimp Tostadas

These Pesceterian BBQ Shrimp Tostadas! Juicy, smoky grilled shrimp piled high on crispy almond flour tortillas, drizzled with a tangy BBQ sauce. A cool and crunchy pickle cabbage slaw adds a refreshing counterpoint to the savory flavors, while a creamy avocado mash brings a touch of richness. This gluten-free recipe is a healthy and flavorful showstopper, perfect for anyone following a pescetarian diet!

Tostada
- Almond Flour Tortillas I use Siete - you can sub for corn tortillas.
- 1 Mashed Avocado
- 1 glug Avocado Oil Chosen foods brand is my favorite
BBQ Shrimp Filling
- 2.5 lbs Wild Raw Shrimp I like the wild argentine shrimp
- 2 Tbsp BBQ Seasoning if you don't have a BBQ seasoning mix together (paprika, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne in a bowl.
- 1 tsp Garlic Salt
- 1/4 c BBQ Sauce Use your favorite, low sugar sauces typically are mustard / vinegar based.
Toppings
- 1 c Shredded Cabbage can buy pre-shredded slaw mix
- 1 Fresh Squeezed Lime this will prevent avocado from browning
- 1/2 c Chopped Dill Pickles
- 1/2 Chopped White Onion
- Fresh Lime Wedges
- BBQ Sauce
Pat dry the shrimp and toss in a bowl, add bbq seasoning mixture, garlic salt and mix together
Place seasoned shrimp in the air fryer at 400 for about 8-10 minutes, shaking half way through
While the shrimp is cooking, start to assemble your slaw. Add shredded cabbage coleslaw mix into a bowl with chopped pickles and onions. Mix together and add fresh lime juice
Once shrimp is done cooking, remove from air fryer and toss in bbq sauce to coat shrimp
Set aside the fillings and toppings and start to assemble the tostada base
Heat a pan to medium high heat and add a generous glug of avocado oil
Add tortilla into the pan and let cook for about 2 minutes per side or until golden brown
Once cooked, remove from the pan and place on a cooling rack. Repeat this process for each tostada
Next start to assemble tostadas by spreading mashed avocado on tortillas, then adding cooked saucy shrimp and top with crunchy slaw.
Serve with fresh limes and enjoy!
