Ingredients

2 lbs prime sirloin steak, cubed (lean cut)

1 tsp sea salt

1/2 tsp freshly ground black pepper

2 tbsp extra virgin olive oil (@cobramestateusa)

4 cloves garlic, minced

Juice of 2 limes 🍋

1/4 cup fresh cilantro, chopped

2 tbsp avocado lime dressing (@primalkitchenfoods)

Instructions

1. Cut steak into evenly sized cubes

2. Create the marinade by combining fresh cilantro, garlic sea salt, olive oil and lime juice. Use a blender or finely chop

  • 3. In a bowl, combine the cubed steak, minced garlic, lime juice, and half of the chopped cilantro. Toss to coat evenly, then cover and let marinate in the refrigerator for at least 10 minutes or overnight for maximum flavor.

4. Bring Steak to Room Temperature:

    5. Remove the marinated steak from the refrigerator and let it sit on the countertop for at least 30 minutes to come to room temperature. This helps ensure even cooking and prevents chewy pieces.

      6. Sear the Steak:

        7. Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium-high heat.

        8. Remove the steak from the marinade, letting excess drip off, and place it in the skillet in a single layer. Sear for 2-3 minutes per side until browned. Work in batches if needed. Remove steak from the skillet and set aside.

        9. Finish and Serve:

          10. Arrange the steak bites on a serving dish and sprinkle with the remaining fresh cilantro.

          11. Serve with avocado lime dressing on the side as a dipping sauce.

            Notes

            Notes:
Marinating Tips: For maximum flavor, marinate the steak overnight in the refrigerator. If short on time, even a 10-minute marinade will add a fresh burst of flavor.
Resting the Steak: Letting the steak rest at room temperature before cooking ensures tenderness and even cooking. Avoid skipping this step for the best results.
Cooking in Batches: Overcrowding the pan can cause the steak to steam rather than sear, so work in batches if needed.
Substitutions for Cilantro: If you don’t like cilantro or can’t find it, substitute with fresh parsley, basil, or a combination of mint and green onion for a fresh, herbaceous twist.
Dipping Sauce Alternatives: If you don’t have avocado lime dressing, try tzatziki, garlic yogurt sauce, or even a classic ranch dressing. For a spicy kick, pair with chipotle mayo or sriracha aioli.
Protein Alternatives: This recipe works well with other lean cuts of beef like flank steak or flat iron. For a different protein, try chicken breast or shrimp with similar marinade and cooking instructions.
Serving Suggestions: Pair these steak bites with roasted vegetables, a side of rice, or a fresh salad. They also make a great filling for tacos or lettuce wraps.
This recipe is easy to adapt, making it perfect for a variety of tastes and dietary needs while delivering bold, fresh flavors!
