Crispy Baked Tacos

These tacos are packed with flavor and nutrition. If you want healthier tacos, this is the recipe for you. It has a great balance of carbohydate, protein, fiber and fat. The best part is this recipe is customizable. You can use any protein (chicken, fish, shrimp) or make it into a taco bowl. Do what works for you and enjoy this healthy recipe

- 1 lb Grass-fed lean ground beef
- 3 Bell Peppers
- 1 Red Onion
- 1 packet Taco Seasoning
- Tortillas (I like almond flour from siete) sub corn tortillas if you need
- 1 jar Salsa
- 1 Bunch Chopped Cilantro
- 1 Avocado
- 1 Lime
- Queso Fresco optional
Preheat oven to 400 degrees
Chop bell peppers and onions into thin slices and set aside
Heat pan with 1-2tbsp of avocado oil and cook peppers and onions until slightly wilted
Remove peppers and onions from pan and set aside
Add ground beef to pan with seasonings, cook through
Once beef is cooked though, add back in peppers and mix together
Add half of a jar of your favorite salsa to the pan and let simmer for 5 minutes
Place open tortillas on baking sheet, then add taco fillings to each one, fold over and place in oven for 5-7 minutes (until tortilla is crispy)
Top with avocado, fresh cilantro and lime squeeze
