One Pan Peanut Chicken + Broccoli

This might surprise you, but I’m definitely not a perfectionist when it comes to cooking. In fact, I hardly ever measure, I have trouble following a recipe to the T and I always and putting a creative spin on a familiar dish 🥦 I want people to know that meal prepping and cooking doesn’t have to be perfect. Doesn’t have to be difficult and it can taste amazing! This taste like takeout, but it’s even better - it’s filled with balance from carbohydrate, protein, fiber & healthy fat 🥥
Course dinner, meal prep, one pan meals

- 2 lbs Diced Chicken thighs or breast
- 1 crown Chopped Broccoli sub / add any veg
- 1.5 c White Basmati Rice
- 1 can Full Fat Coconut Milk Unsweetened I love the Trader Joe's brand
- 2 tbsp Peanut Butter sub almond butter / crunchy nut butter
- 2 tbsp Soy Sauce sub tamari or coconut aminos
- 1 tbsp Toasted Sesame Oil
- 1 tbsp Honey
- 1 Fresh Lime Juice
- 1 tsp Cornstarch sub arrowroot powder
- Sesame Seeds garnish
Preheat oven to 415
Dice chicken into even size pieces
2 lbs Diced Chicken
Whisk together together soy sauce, honey, peanut butter, toasted sesame oil, cornstarch and lime juice in a measuring cup
2 tbsp Peanut Butter, 2 tbsp Soy Sauce, 1 tbsp Toasted Sesame Oil, 1 tbsp Honey, 1 Fresh Lime Juice, 1 tsp Cornstarch
Marinate chicken in peanut soy mixture for 10 min - 24 hours
Rinse 1.5c dry white basmati rice through a strainer until water runs clear
Spray the bottom of a baking pan, pour in rinsed rice
1.5 c White Basmati Rice
Add chopped broccoli and any other vegetables on top
1 crown Chopped Broccoli
Add chicken on top of broccoli
Pour over one can of coconut milk over the whole mixture
1 can Full Fat Coconut Milk Unsweetened
Bake for 30-35 minutes, broil the last 5 minutes for a crispy texture
Garnish with sesame seeds and lime + enjoy!
