Paleo Chocolate Chip Cookies

Healthier chocolate chip cookies with a vegan option available.
- 1/2 c Coconut Oil
- 3/4 c Coconut Sugar
- 1 Egg (sub flax egg for vegan option)
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Soda
- 1/2 tsp Sea Salt
- 2+1/4 c Almond Flour
- 1/2 bar 72% Cacao Dark Chocolate (chopped)
Preheat oven to 350
Cream together coconut sugar and coconut oil, then add in vanilla extract and egg
Add dry mixture into wet mixture, then chop dark chocolate into chunks and fold into the mixture. Spoon out into even sized balls then place on parchment paper and bake for 10 minutes.
