BBQ Shrimp Filling
2.5lbsWild Raw Shrimp I like the wild argentine shrimp
2Tbsp BBQ Seasoningif you don't have a BBQ seasoning mix together (paprika, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne in a bowl.
1tspGarlic Salt
1/4c BBQ Sauce Use your favorite, low sugar sauces typically are mustard / vinegar based.
Toppings
1cShredded Cabbage can buy pre-shredded slaw mix
1Fresh Squeezed Lime this will prevent avocado from browning
1/2cChopped Dill Pickles
1/2Chopped White Onion
Fresh Lime Wedges
BBQ Sauce
Instructions
Pat dry the shrimp and toss in a bowl, add bbq seasoning mixture, garlic salt and mix together
Place seasoned shrimp in the air fryer at 400 for about 8-10 minutes, shaking half way through
While the shrimp is cooking, start to assemble your slaw. Add shredded cabbage coleslaw mix into a bowl with chopped pickles and onions. Mix together and add fresh lime juice
Once shrimp is done cooking, remove from air fryer and toss in bbq sauce to coat shrimp
Set aside the fillings and toppings and start to assemble the tostada base
Heat a pan to medium high heat and add a generous glug of avocado oil
Add tortilla into the pan and let cook for about 2 minutes per side or until golden brown
Once cooked, remove from the pan and place on a cooling rack. Repeat this process for each tostada
Next start to assemble tostadas by spreading mashed avocado on tortillas, then adding cooked saucy shrimp and top with crunchy slaw.
Serve with fresh limes and enjoy!
